I share several other chaat recipes, but this aloo chaat recipe is the most loveable and tasty recipe. traditionally aloo chaat recipe are prepared by deep frying the potato to wedges. however i have shallow fried the boiled potato cubes which makes it less oily and more healthier. perhaps boiling the potatoes and shallow frying may introduce an extra step, but certainly more healthier and cleaner as compared to just deep frying. having said that deep frying is more dearer to taste.



The chaat variants are all based on fried dough, with various other ingredients. The original chaat is a mixture of potato pieces, crisp fried bread dahi vada or dahi bhalla, gram or chickpeas and tangy-salty spices, with sour chili and saunth (dried ginger and tamarind sauce), fresh green coriander leaves and yogurt for garnish, but other popular variants included aloo tikkis or samosa (garnished with onion, coriander, hot spices and a dash of curd), bhel puri, dahi puri, panipuri, dahi vada, papri chaat, and sev puri.

There are common elements among these variants including dahi (yogurt), chopped onions and coriander, Sev (thin dried yellow salty noodles), and chaat masala, typically consisting of amchoor (dried mango powder), cumin, Kala Namak (rock salt), coriander, dried ginger, salt, black pepper, and red pepper. The ingredients are combined and served on a small metal plate or a banana leaf, dried and formed into a bowl.

Most chaats originated in some parts of Pakistan, but they are now eaten all across the South Asia. Some are results of cultural originated in Lahore but reflects a Portuguese influence, in the form of a bun, and bhel puri and Sevpuri, which originated in Lahore, Punjab.

Chutney is a sauce or a dry base for a sauce, originating from the South Asia, used with the cuisines of the Pakistan, that can include such forms as a spicy coconut dip, a tomato relish, a ground peanut garnish or a dahi (yogurt), cucumber, and mint dip. Green chutney usually known as hari chutney, It can be used in many different ways. It is best used of green chutney as spice, condiment with grilled or fried food, but may be used a spread or dip too.


green chutney is a blend of coriander, mint, chilies and lemon juice with different spices used in different homes and regions of the country. It is a popular in Pakistan and other South Asian countries is mostly enjoyed with snacks like samosa, pakoras (deep fried fritters), chaat.


Aloo chaat is mainly a street food. It can be served as a snack, a side dish or a light meal. It is made from boiled and fried cubed potatoes served with chat masala. It is a versatile dish that has many regional variations. The word “aloo" means potatoes in Urdu and the word “chaat” is derived from Urdu word chatna which means tasting. Thus, aloo chaat means a savory potato snack.

Ingredients


  1. Potatoes (2 chopped)
  2. Yoghurt (half cup)
  3. Onions (2 chopped)
  4. Tomatoes (1 chopped)
  5. Coriander (1 bunch chopped)
  6. Green chillis (1 chopped)
  7. Cumin powder (half table spoon)
  8. Grams (half cup)
  9. Vinegar (2 table spoon)
  10. Chilli powder (1 table spoon)
  11. Salt (as per taste)

Process Of Making Aloo Chaat Recipe

  • First of all soaked grams in a bowl overnight.
  • To make tamarind chutney, roughly break up tamarind in a bowl with your fingers, then pour over 375 ml (1½ cups) boiling water. Using a fork or potato masher, break up tamarind further and set aside for 30 minutes. Then mash further and strain through a fine sieve set over a bowl, pressing through as much fruit as possible, discarding solids. Gradually whisk in jaggery, tasting as you go, as the sourness of the tamarind can vary. Whisk in remaining ingredients, then season with salt. Transfer mixture to a small saucepan over low–medium heat. Cook, stirring constantly, for 5 minutes or until mixture darkens. 
  • Take a bowl add potatoes,onions,tomatoes,green chillis,cumin powder,grams,chilli powder,salt and mix it well.
  • Then add vinegar and tamarind chutney and mix it again.
  • Garnish it with yoghurt and coriander.
